The ultimate comfort food is this chicken casserole topped with chili cheese Fritos that is cheesy, crispy, colorful, and flavorful. Even better, only one pot gets dirty during preparation. If desired, garnish with salsa, sour cream, and chopped cilantro.

The ultimate comfort food is this chicken casserole topped with chili cheese Fritos that is cheesy, crispy, colorful, and flavorful. Even better, only one pot gets dirty during preparation. If desired, garnish with salsa, sour cream, and chopped cilantro.

  • 1 tablespoon unsalted butter

  • 1 small onion, chopped

  • 4 cups cubed cooked chicken breast

  • 1 (15.25 ounce) can black beans, rinsed and drained

  • 1 (15.2 ounce) can corn, drained

  • 1 (10.5 ounce) can condensed cream of chicken soup

  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained

  • 1 (4 ounce) can chopped green chilies

  • 1 (4 ounce) package cream cheese

  • ⅓ cup chopped fresh cilantro

  • 2 cups shredded Cheddar cheese

  • 1 (10 ounce) bag chili and cheese flavored corn chips (such as Fritos® Chili Cheese® Corn Chips)

Directions

  • Set the oven to 350 degrees Fahrenheit (175 degrees C).
  • In a sizable saucepan set over medium heat, melt the butter. Add the onion and simmer for 5 minutes, or until tender.
  • Add the following ingredients: cream of chicken soup, green chiles, cream cheese, cilantro, tomatoes and chiles (with juice), beans, corn, and chicken. Cook for about 5 minutes, or until cream cheese has melted.
  • In the bottom of a rectangular casserole dish measuring 9 by 13 inches, distribute one-third of the chips. Add half of the chicken mixture on top. Add a third of the cheese to the chicken mixture. the layer once more. Add the remaining third of the chips and the final third of the Cheddar cheese to the second layer.
  • For about 30 minutes, or when the cheese has melted and is just beginning to brown, bake in the preheated oven. Before cutting it into squares, take it out of the oven, cover it, and let it cool for 30 minutes.
